Lamb Handi
Experience the tantalizing flavors of our Lamb Handi, a beloved North Indian dish that showcases tender pieces of lamb cooked in a rich and aromatic gravy. This culinary masterpiece combines succulent lamb, fragrant spices, and a medley of flavors that will transport you to the heart of India.
Ingredients:
500 grams lamb, cut into pieces
1/2 cup yogurt
1 tablespoon ginger paste
1 tablespoon garlic paste
2 medium onions, finely chopped
3 medium tomatoes, pureed
2 tablespoons vegetable oil
1/2 teaspoon cumin seeds
1/2 teaspoon turmeric powder
1 teaspoon red chili powder
2 teaspoons coriander powder
1 teaspoon garam masala
Salt to taste
Fresh coriander leaves for garnish
Recipe:
1.In a bowl, whisk together the yogurt, ginger paste, garlic paste, and a pinch of salt. Add the lamb pieces to the bowl and coat well. Set aside to marinate for at least 30 minutes.
2.In a pan, heat the oil over medium heat. Add the cumin seeds and sautƩ for a few seconds.
3.Add the chopped onions to the pan and sautƩ until they turn golden brown.
4.Add the pureed tomatoes to the pan and sautƩ until the oil starts to separate from the mixture.
5.Add the turmeric powder, red chili powder, coriander powder, and garam masala to the pan. Mix well.
6.Add the marinated lamb pieces to the pan and stir well to coat them with the spices.
7.Add enough water to cover the lamb pieces and bring the mixture to a boil.
8.Reduce the heat to low, cover the pan with a lid, and let the lamb cook for about 30-40 minutes or until it becomes tender.
9.Once the lamb is cooked, remove the lid and let any excess water evaporate until the gravy reaches the desired consistency.
10.Garnish with fresh coriander leaves and serve hot with naan or rice.
