Cashew Stirfry

Experience the delightful combination of crunchy cashews and vibrant vegetables in our Cashew Stir Fry. This flavorful dish showcases the natural sweetness of cashews, along with a medley of colorful vegetables, all tossed in a savory sauce.


1 cup of organic cashews

1 red bell pepper, sliced into thin strips

1 yellow bell pepper, sliced into thin strips

1 green bell pepper, sliced into thin strips

1 onion, sliced into thin strips

1 teaspoon of ginger, minced

1 tablespoon of garlic, minced

1 tablespoon of organic soy sauce

1 tablespoon of organic cornstarch

1 tablespoon of organic vegetable oil

Salt and pepper to taste


1.Begin by toasting the cashews in a dry pan over medium heat until they turn slightly golden brown. Set aside.

2.In a small bowl, whisk together the cornstarch and soy sauce until it forms a smooth paste.

3.Heat the vegetable oil in a large skillet over medium-high heat. Add in the onion, ginger, and garlic, and cook for 2-3 minutes until fragrant.

4.Add in the sliced bell peppers and stir-fry for 5-7 minutes until they are tender and slightly browned.

5.Add the cashews and soy sauce mixture to the skillet and stir to combine. Cook for an additional 2-3 minutes until the sauce thickens.

6.Season with salt and pepper to taste.

7.Serve hot with rice or noodles. Enjoy!
