Jaggery Rice
Immerse yourself in the warm, sweet indulgence of our Jaggery Rice, a delightful fusion of fragrant basmati rice and natural jaggery. With each spoonful, experience the gentle sweetness and subtle caramel notes that perfectly complement the aromatic grains.
Ingredients:
1 cup basmati rice
2 cups water
1/2 cup jaggery
1 cinnamon stick
3-4 cloves
2-3 green cardamom pods
1/4 cup ghee
1/4 cup raisins
1/4 cup sliced almonds
A pinch of salt
Recipe:
1.Rinse the rice with water a few times and soak it in water for at least 30 minutes.
2.In a pan, add the jaggery and 1/2 cup water. Heat it until the jaggery is melted and mixed well with water.
3.In a pot, add 2 cups water, cinnamon stick, cloves, green cardamom pods, and a pinch of salt. Bring it to a boil.
4.Drain the soaked rice and add it to the boiling water. Cook the rice until it is 70-80% done.
5.Drain the water and add the melted jaggery mixture to the rice. Mix well and add ghee. Mix again.
6.Cover and cook the rice on low flame for 10-12 minutes until the rice is fully cooked and has absorbed all the jaggery and ghee.
7.In a separate pan, roast the raisins and almonds until they turn slightly golden.
8.Once the rice is done, turn off the heat and let it rest for 5 minutes.
9.Garnish the rice with roasted raisins and almonds.
10.Serve hot.
