Falafel with Hummus

Ingredients:
1 cup organic chickpeas, soaked overnight
1/2 cup organic onion, chopped
1/4 cup organic parsley, chopped
1/4 cup organic cilantro, chopped
4 cloves organic garlic, chopped
2 tbsp organic all-purpose flour
1 tsp organic cumin powder
1/2 tsp organic coriander powder
1/2 tsp organic paprika
Salt and black pepper to taste
Organic vegetable oil for frying
For the hummus:
1 cup organic chickpeas, cooked
1/4 cup organic tahini
2 cloves organic garlic, minced
1/4 cup organic lemon juice
Salt to taste
Water as needed
Recipe:
1.Drain and rinse the soaked chickpeas and add them to a food processor. Pulse until the chickpeas are coarsely ground.
2.Add the onion, parsley, cilantro, garlic, flour, cumin powder, coriander powder, paprika, salt, and black pepper to the food processor. Pulse until well combined and the mixture forms a coarse paste.
3.Transfer the mixture to a bowl and cover it with a plastic wrap. Refrigerate for at least 30 minutes.
4.Meanwhile, make the hummus. Add the cooked chickpeas, tahini, garlic, lemon juice, salt, and water to a food processor. Pulse until smooth and creamy, adding more water as needed to reach the desired consistency.
5.Heat the vegetable oil in a deep frying pan over medium-high heat. Scoop tablespoonfuls of the falafel mixture and roll them into balls. Flatten them slightly to form patties.
6.Fry the falafel in batches for about 3-4 minutes per side or until golden brown and crispy. Drain on a paper towel-lined plate.
7.Serve the hot falafel with the hummus on the side for dipping or stuffed into pita bread with sliced vegetables. Enjoy your delicious organic falafel with hummus!
