Christmas Cake

Ingredients:
2 cups organic all-purpose flour
1 cup organic brown sugar
1 cup organic raisins
1 cup organic currants
1 cup organic chopped dates
1 cup organic chopped mixed nuts
1 cup organic dried cranberries
1 cup organic unsweetened applesauce
1 cup organic vegetable oil
1 cup organic almond milk
1 tsp organic cinnamon
1 tsp organic nutmeg
1 tsp organic ground cloves
1 tsp organic vanilla extract
Recipe:
1.Preheat the oven to 350°F (175°C).
2.In a large mixing bowl, mix together the flour, brown sugar, raisins, currants, chopped dates, mixed nuts, and dried cranberries.
3.Add the applesauce, vegetable oil, and almond milk to the mixing bowl and mix well.
4.Add the cinnamon, nutmeg, cloves, and vanilla extract to the mixing bowl and stir until all ingredients are combined.
5.Pour the mixture into a greased 9-inch cake tin.
6.Bake for 1 1/2 to 2 hours or until a toothpick inserted into the center of the cake comes out clean.
7.Remove the cake from the oven and let it cool completely in the tin.
8.Once cooled, remove the cake from the tin and serve.
